What catches people out is that there is no official form, and GOV.UK itself warns that a home-made deed poll is not accepted everywhere. Every organisation decides for itself whether the document in front of it is good enough, and a home-made deed that one bank accepts is sometimes queried by the passport office. If that happens there is nobody to go back to, and it usually happens weeks later, halfway through an application you needed to finish.
So the question is not really whether you are allowed to write it yourself. It is whether you want to find out, at the counter, that you got it wrong.
